My Favorite Guinea Pigs!!!

Someone asked me recently what makes me truly happy. After pondering this for a while I came up with an answer. I am the happiest when I am cooking and sharing it with the people I love.

I try to get together with my big brother and his girlfriend at least one a week. We have such a wonderful time whether we are playing cards or badminton. Brenda dear we are 0-3 for the season I think we need more practice or a better ref (sorry honey),

I made a real comfort food dinner last night but lightened it up a little;
Meatloaf (I ground boneless skinless chicken breasts for 1 pound of meat) and used Angus beef for the other pound.
Mashed potatoes: In my mashed potatoes I added a butter and skim milk. These tricky little devils may sound healthier because of the skim milk but still pull in a whopping 260 calories for 1 cup!!!! My meatloaf was only 228!!!
Oven roasted cauliflower and Brussels sprouts: They were the stars of the meal!!! at only 92 calories for a cup these flavorful jewels have quickly become one of my favorites.
Green beans were only 20 calories. Flavoring with bouillon keeps calories down.
Bottom line is the meal was only 600 calories......Oh but dessert!!!! The queen of soul Aretha Franklin's Peach Cobbler (thank you per my calorie counter at spark people. Drum roll please........467 calories a serving!!! If you had it with a 1/2 cup of vanilla ice cream (which I did NOT!!) add an additional 132.7 calories. 

Okay so what have I learned from this? Butter is the death of any healthy recipe and maybe I need to research healthy, hot yummy desserts. Any suggestions??? I will leave you with this "A crust eaten in peace is better than a banquet partaken in anxiety." Aesop

Let the Adventure Begin!!

As all of you know. I love food!!! I love to read about it, watch it on tv, cook it and most of all eat it. I have always wanted to be healthy, but the "3 f's" fatty, flavorful and fried always won.  Now at 49 (saying my real age is a big step, I have been 39 for 10 years) I have developed a few health issues I need to take care of. My cholesterol is very high and I am about 30-40 over weight.

My  goal is to find alternatives to the foods I love, while discovering new wonders of the culinary world. I will eat my way to 125 pounds. And I want to share my journey with you.

Welcome to the World Kamri Joelle Barnwell

I am such a blessed woman. When my husband and I were married twelve years ago at which time I presented him with two stepchildren and he presented me with five. Together we have two daughters (40 and 14) and five sons (38, 32, 30, 27, 26). Our children have given us twelve grandchildren ranging from 21 to 4 years old. But last night had to be one of the most wonderful events in the world. Our first born grandson and his wife ushered into the world our first great grandchild. Kamri Joelle Barnwell born July 13, 2011 at 7:42 p.m. Kamri weighed 5 pounds 6 ounces and was 18 inches long.

Needless to say we are on cloud nine!!!

Today is all About Family!!!

I was blessed to married a man with adult children. When I did I became a grandmother at a very early age. Now I am blessed to be a great grandmother! I am so excited. Kamri Joelle is due to arrive on July 22. Today we are having a BaByQ!! It will be a couples shower barbecue. It is going to be so much fun!!! Pictures to come....

Then when I arrive home my sister and her family should be here from Morrisville, NY. We only get to see each other once a year so it is always so special. Her husband and 19 yr old will be going home in a week. Sheron along with her 13 yr old and 2 year old will stay until July 18!!!

Better run I need to make baked beans and banana pudding for the barbecue!!!

My New Project.....Let the Adventure Begin!!

I will be the first to admit, I LOVE FOOD!!!! I love to read about it, watch it on tv, shop for it, prepare it and most of all eat it. This is part of who I am and that will never change. Because of this love affair with food, photography and writing, I thought to myself, "Self, you should write a cookbook!" 

This project may turn out to be a unique gift for family and friends or I perhaps publish a cookbook and meet my food heroes Cat Cora and Paula Deen. Two strong southern ladies that can cook!!

I can not believe my precious 7lb 3 oz 21 1/2 inch baby boy is 26 years old today! Where did the time go? I do not feel older than 26 myself. I am so proud of the man he has become. He is so kind and loving. He works hard and enjoys life!

To Blessed to Stress

I am home today resting. I have strep and I am not feeling the best in the world. It is all good. I am blessed with a husband that loves me and takes great care of me when I am sick. He know I love coffee when I have a sore throat and he always seems to keep a fresh pot for me. As I rest, it is in these quiet moments I am able to realize just how blessed I am. I came to my blog and realized I have not posted anything since the end of December.

So much has happened in the first 48 days of 2011. My nephew Wyatt became a teenager, Jennifer tried out and made her high school JV soccer team, My oldest grandson Jimmy was married and my son turns 26 tomorrow.  Well I better sign off and get some rest tomorrow I plan surprise Geoff with a cake and his favorite food homemade chicken and dumplings before he goes off to work.
