I have finally decided what I want be when I grow up!!



I am so excited!!! I am taking the first step toward my new career! I start classes on Thursday.  I know it will be a little over two years before I graduate, but as a dear friend reminded me yesterday it will be here before we know it. I started thinking about that. In two years I am going to be two years older whether I attend school or not. I might as well use this time to create a better life for me and my family.

In the future I see a possible medical mission trip, my husband getting his masters degree in history and me helping my daughter as she starts college in four years!!

With God's strength and guidance I will be the best student possible. I need to keep my priorities straight. God, family, career!

A Tradition of Two Southern Women !!!



A few days ago we received some sad news. Our neighbor Douglas Vines past away. He gave so much to the community at Christmas time with his Christmas light display. Some people thought he over did it and maybe he did. But he did it for one reason. His love for his family. He started it twenty one years ago when his first grandchild was born. They wanted her to see Christmas lights and there was no place to go that was close to their home so they brought the lights to her. Each year he added more lights and decorations. Jennifer enjoyed them every year since she was two. Each year Jennifer and I would bake cookies for him as a small thank you gift.


His last wish was to come home. His wife Estelle wanted to honor his final request and brought him home to lay in state.We had discussed the time we were going to visit the night before. We had been at the soccer field all morning. Jennifer's team played at 11:00 am so we had to get her there early for the warm up. After a hard fought 4-3 loss  where Jenn scored two goals. We came home to watch the Bulldogs lose. I was feeling a little blue and thought I would stay home. My beautiful daughter came out of the bath dressed for visitation. I made the statement that I wasn't sure we were going. She looked at me sweetly and said "Mommy, you know we are southern women. We are suppose to cook and go visit our neighbors when someone dies"



She was right. Tradition is something I find very important and have raised my children to believe the same thing.So Jenn and I together baked a chocolate bundt cake. We couldn't bring ourselves to bake chocolate chip cookies. Charlie, Jennifer and I walked down the street and visited with his widow. I was such a good visit. You could tell how much it meant to her knowing that people cared.

Thank you Jennifer for encouraging Mommy to do the right thing!!!

Motherhood....a never ending always changing journey!!!!

I have often heard that motherhood is not for the weak of heart or I work 24/7 for no pay! That is not the way I see it at all.

Motherhood is an adventure. How many careers do people have that they can truly say they never get bored. Just in this week alone I was a soccer star, time warped back to 80's, had a WWE diva as a daughter, had a great disscussion with a handsome 25 yr old man that really listened to my opinions and became a master tutu maker. Some weeks aren't quite as exciting. Some days I am a master chef or a chauffeur or just a sounding board when the day isn't going the way it should. Being a mom is the greatest job in the world. So here a a better motherhood quote: "Being a full-time mother is one of the highest salaried jobs in my field, since the payment is pure love." ~Mildred B. Vermont

Congratulations Billy and Nicole!!!

We returned home Monday from a great weekend in Jacksonville, Florida. We went to attend the wedding of my stepson Billy and his beautiful bride Nicole. It was such a joy to visit with our grandchildren. Isabelle is nine and Silas is six.

While we were there Charlie, Jennifer and I went to the beach and spent the day. It was glorious!!! I would love to live on a beach some day. Or at least get to visit one every summer.

We built a perfect sandcastle! We finished it right before the tide came in. We had such a good time. We need weekends like that more often!!!

It always amazes me how good I feel when I go to the market and know I have good healthy food in the house to feed my family. I can sit back and breath a sigh of relief. As I was putting away groceries today, humming happily to myself I realized why that is so important to me.

First, I think as a southern woman we are programed since birth that you nurture all those you love with food. Our culinary skills are like a crown of glory. And for someone that loves to cook as much as I do it comes almost as easy as breathing.

Secondly, I feel it may come from my up bringing. I was raised in a poor family and sometimes we had no idea where our meals would come from. So when we get low on food in the house I tend to get a little nervous even though there is nothing to worry about anymore.

For today my pantry is full. I have a months worth of good dinners all planned out. I will only need to go to the store for bread, milk and fresh produce each week. I am smiling as I type this. I think I will treat myself to a bubble bath.

I played soccer with Lady Cyclones!!!



I had such a good evening. I took Jennifer, Shelby and Grace to soccer pratice. I was asked to play in the scrimmage. I played keeper and then I was a forward and scored a goal!!! It gave me the extra exercise I need.
I have always loves sports and didn't get to play them as a child. I think in the spring I will join an adult league. I will weight a mere 120!!!

One of my favorite recipes!!!

Jalapeno Cabbage


Servings: 6



  • 1 small head green cabbage, chopped
  • 4 slices of bacon
  • 2 jalapeno pepper, seeded and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon fresh cracked black pepper
  • 4 cups of chicken broth


Cook bacon in a  large nonstick dutch oven. Remove bacon, saute chopped cabbage in bacon dripping. Add jalapeno peppers, salt, pepper and chicken broth. Reduce heat to medium. Alternately cover and cook; open and stir until cabbage is to the desire tenderness.

I love to travel! My mom always teased me by saying "Karen you jump in the car and then ask where you are going!" I have always been a fly by the seat of your pants kind of girl. One that was up for any adventure life had to offer. But I also have a secret. In the past I always get just a little high strung while I am preparing for the trip.

I have gotten so much better. I have come to realize that I am not in control God is. The world doesn't revolve around me, even though I like it when it does! My son is a grown man and can take care of himself and the animals while I am gone, And if I forget something I can by another one or do without it.

These little epiphanies have made me a much happier person to travel with. I make a list of what to pack. That helps someone like myself that chases rabbits and if I forget something, oh well Wally World here I come!

So tonight I will make my list. Tomorrow we will get our  hair done, do all the shopping that I need to do and make sure Jennifer has everything she needs to pack. Friday I will take Jennifer to school, walk 3 miles, pack for myself and make sure my darling husband has everything he needs packed, I will feed and water my dogs and kiss my son goodbye. Go pick Jenn up at school. Head over to my step-son's house pick him and my beautiful granddaughter Kiaya and off to Florida we will go!!!

Saturday I will relax and enjoy life!!!!



Reflections....

As I am enjoying my coffee my mind wanders about, thinking of the blessings God has put in my life! I am not saying life is always good, but I am saying God  always is. Here is an example.

Yesterday was my father's birthday. He would have been 75 if he were living. Even though we had a sometimes stressful relationship because of his alcoholism I loved him. And I know he loved me the best way he could.

Daddy (J.W. Eaton) is the handsome marine in the middle.

Daddy was born August 31, 1935 and passed away suddenly on July 8, 1992 at age 57. Every year I would make him a banana pudding (his favorite) for his birthday. I can't eat banana pudding without thinking of my daddy.

On May 28, 1999 I married the most wonderful peson I know! When I married him I gained all my beautiful grandchildren. We have twelve now, but at that time we only had seven. My wonderful grandson Cody was born August 31, 1991. God chose to take my daddy, but blessed me with another reason to celebrate!!

God gave me the same type of blessing when my mom passed away. Mom died Feb. 19, 2002 on my son's 17th birthday. So we celebrate his life as opposed to focusing on her death.
